How to Cook

0:00Turn the hob on to a medium temperature and pour the oil into a medium sized pot

2:38Tip onions & garlic into the pot and grind the salt & pepper

8:38Tip the nduja, anchovies, sage & rosemary and cook for a few minutes, stirring intermittently

11:24Tip in the red wine, turn up the hob temperature to reduce the wine

14:34Turn the hob temperature back down to medium and stir in the pumpkin, sea salt, passata and stock. Turn the heat back up to medium/high to bring to a simmer

21:13Turn the heat back down to medium and simmer for around 7 minutes. Stir in the cavolo nero and simmer for a few more minutes
